Abstract:
The Paper present about how to produce temperature control based on fuzzy logic to be applied in pastel frying using deep-frying technique. The research was carried out with a design method which included functional and structural design. Then, a performance test is carried out. Control is done by adjusting the voltage which will be used to control the voltage given to the heater through the application of fuzzy rules. The results showed that the application of fuzzy temperature control to deep-frying technique frying gave a good performance. Rise time of 706 seconds, overshoot to 149 C, good temperature stability with an average error of 1.19 C. The temperature of the frying pan is quite stable with a maximum temperature of 147 C and a minimum temperature of 143 C from the setting point of 145 C. Quality testing of frying results shows that this system can produce same of color and pastel maturity in one frying process and between frying.
