Abstract:

Industrial uses of an enzyme in the fields of medicine and foods are increasing. Lactase is one of those enzymes. Since the lactase derived from yeast exists in the cell body, it is obtained from inside of the cell by destroying the cell membrane by ultrasonic disintegration conventionally. Recently, the new collection method of enzyme from the inside of cells using the high voltage pulse electric field (PEF) has been studied. Also this study focuses on extracting the lactase from pores forming on the cell membrane effectively by applying PEF to Kluyveromyces lactis. As a result, intracellular lactase has been able to be extracted to the culture medium by applying PEF to K. lactis.
