Kinetics of structuring of protein solutions in magnetic fields in dehydration

Formation of different structures of protein films in process of dehydration of water solutions of albumin is discussed. Optical method of observation was used for analysis of different molecular structures in the protein films. The influence of magnetic field and solution acidity during drying of the solution on structures in the films is considered.
