Numerical Model of Ohmic Heating for Random Aggregates

The article describes methods used for numerical modelling of the ohmic heating applied in the food industry. The main challenge is related to mesh generation for a random aggregate structure composed of potato cubes immersed in the conducting fluid. The developed model can handle a cube size described by a probability density function. The maximal number of cubes in one layer is determined by the size of the tank. Using homogenization theory substitute parameters of the aggregate were determined.
