Optical Properties of Apple Varieties Grown in Bulgaria

The present study aims to investigate the possibilities of fluorescence and NIR spectroscopy for recognizing apple varieties grown in Bulgaria and to look for a correlation between optical parameters such as apple juice’s refractive index and the fruit’s color parameters. The focus is on the correlation between fluorescence spectra and apple variety using color, sugar content, and refractive index data, and the study of specific fluorophore in apple juice and their quantification using chemometrics techniques will be the subject of future scientific developments.We analyzed twenty samples of the studied varieties according to twelve optical indicators. Through cluster analysis, we divided the studied apples based on their similarity and distance according to the studied parameters.
