Electrochemical properties of phycocyanin, extracted from Spirulina by green methods

Phycocyanin is a protein obtained from different species of blue-green algae. Some algae, such as Arthrospira platensis and Arthrospira maxima, commonly referred to as Spirulina, are known to synthesize C-phycocyanin - a blue and water-soluble pigment. Besides being used as a natural pigment in the food industry, interest in C-phycocyanin has increased due to its antioxidant, anti-inflammatory, and anticarcinogenic properties. For this reason, it is used in the pharmaceutical industry as an ingredient in food supplements. Our investigation focuses on two electrochemical methods that allow further study of the biophysical properties of the compound - electrochemical impedance spectroscopy (EIS) and cyclic voltammetry (CV). The purpose of this study is the investigation of the electrochemical properties of phycocyanin. The obtained results provide valuable information about the specific influence of the protein on aqueous solution.
