Drivers influencing lean practices in street food vending process

Street food was considered to provide nutrients to the urban and rural populations at an affordable price. The street food sector is considered to be located at the bottom of the pyramid market structure, where most of the customers' demand is for the low-priced consumer goods and farm fresh agricultural goods. In this paper, various lean drivers are systematically captured and their relationship between the drivers are analyzed using Interpretive Structural Modeling for the street food sector. This model infers, the customer relationship management driver is ranked in the first level and hence should be given the highest importance followed by food service management and cost management drivers in the successive rank levels.
