AI-Driven Innovations in Alternative Proteins: A Multivocal Perspective on Sustainability and Future Food Systems

This review explores the role of artificial intelligence in advancing alternative protein production to sustainably meet the rising global meat demand. To provide a comprehensive overview of the present state of knowledge, we used a multivocal approach and identified 53 applications integrating the domains of alternative proteins and artificial intelligence. Key findings show artificial intelligence's application for optimizing cellular agriculture, enhancing plant-based and fermentation-derived proteins, and addressing consumer preferences. Identified gaps include limited open-access datasets. This review highlights the need for interdisciplinary collaboration to effectively leverage artificial intelligence for sustainable protein production.
